Wild Garlic Fritters

Ingredients

1 & 1/2 cups White Beans
1 tsp Sea Salt
Big Handful Wild Garlic, chopped fine
2 tbs White Wine vinegar
1 cup/250ml Milk, I use hemp
1/135g GF Self Raising Flour
3 tbs Chia Seeds
Pinch Sea Salt & Pepper
2 tbs Capers
6 Spring Onions, finely chopped
4 tbs Olive Oil, for frying

In a large mixing bowl, combine the white beans with sea salt, finely chopped wild garlic, white wine vinegar, milk, gluten-free self-raising flour, chia seeds, a pinch of sea salt and pepper, and the capers. Stir everything together gently until a thick, slightly chunky batter forms, making sure to keep the beans whole for added texture. Warm the olive oil in a frying pan over medium heat and, once hot, spoon in portions of the batter to form fritters. Allow them to cook until the undersides are golden and set. As they fry, scatter the finely chopped spring onions over the tops of the fritters so they settle into the batter. Carefully flip each fritter and cook the other side until golden brown. Once all the fritters are cooked on both sides, transfer them to a preheated oven and bake for 15 minutes to ensure they are cooked through and have a light, crisp finish. Serve the fritters warm, with a generous spoonful of hummus and a few delicate wild garlic flowers for a fresh, aromatic garnish.
