Whole Roasted Pineapple

2 Pineapples, peeled

1 tbs Coconut Oil

2 tbs Coconut Sugar

2 tsp Ground Cinnamon

1/2 tsp Cayenne Pepper


Toasted Coconut Flakes

Dairy Free Ice Cream

Fresh Mint

Drizzle of Maple

Pre heat your oven to 180 degrees C. Place a non stick pan over a medium heat and add the coconut oil. When the pan is hot add the pineapples. Colour the pineapples on all sides until golden. Sprinkling over the sugar, cinnamon & cayenne whilst they are cooking.

When the pineapples are golden, place them onto a baking tray then into the oven for 15-20 minutes.

Once baked, carve the pineapples at the table & serve with toasted coconut flakes, ice cream, mint & a drizzle of maple syrup.
