Simple Ancient Grain Stew

Ingredients

1 cup/200g Green Lentils

1 cup/200g Quinoa

1/2 cup/100g Split Red Lentils

1 cup/200g Pearl Barley

1 Stick Celery, chopped small

2 Spring Onions, chopped small

2 cloves Garlic, peeled and bashed

2 Springs Thyme

1 tbs Miso Paste or a Vegetable Stock cube

Juice of Half a Lemon Juice

1 tbs Jerk Seasoning (optional)

Pinch Sea Salt & Pepper

Serve with

Fresh Herbs

Method

Add the lentils, quinoa, split red peas & pearl barley to a saucepan & rinse under cold water 2-3 times. Fill the pan with water so the grain mix is covered with about an inch of water. Add the celery, spring onion, garlic, miso, thyme, lemon & salt + pepper then mix well.

Pop a lid on the pan and place over a low heat. Let the mix cook away for 25-35 minutes, stirring it every now and then.

One the grains have cooked and absorbed the liquid stir through the jerk seasoning paste.

Serve the strew with sauerkraut, hummus & fresh herbs.
