Roasted Radishes with Pistachio Butter Bean Humous

3 cups/360g Radishes, halved

5 tbs Extra Virgin Olive Oil

1 tbs Miso Paste

2 tbs Maple Syrup 

Zest & Juice 1 Lemon

Pinch Sea Salt & Pepper 

Pistachio Butterbean Humous 

2 cups/400g Butterbeans, cooked 

4 tbs Pistachio Butter

Juice & Zest 1 Lemon 

5 tbs Extra Virgin Olive Oil 

1 tsp Ground Cumin

5 cloves Garlic 


Crushed Pistachio 

Sprinkle of Sumac



Pre heat your oven to 180 degrees C. Toss the radishes, olive oil, miso, maple & seasoning into a mixing bowl, mix well to make sure everything is coated well. 

Place the radishes onto a baking tray and into the oven for 12 minutes. 

Add all the humous ingredients to a food processor & blitz until smooth, adding a little water to create a luxurious creamy consistency. 

When the radishes are lightly roasted, serve them on top of lashings of humous then sprinkle over pistachio & sumac.
