Rice Pudding

A child hood favourite dessert veganised for my low cost meals recipe video, coming in on average 55p per portion, a very simple but indulgent dessert.

Ingredients

1 cup/200g Pudding Rice

1/2 cup/100g Caster Sugar

4 cups/1000ml Non Dairy Milk

1 tsp Ground Nutmeg

1 tsp Vanilla Extract

1 tsp Ground Cinnamon

Serve with 

Jam

or

Apple Compote

1 Cooking Apple, peeled & cubed

4 tbs Caster Sugar

Pinch Cinnamon

2 tbs Water

Pre heat your oven to 180 degrees C.

Add the milk, nutmeg, vanilla & cinnamon to a medium sized saucepan & place it over a medium heat to infuse.

When the milk just about comes to a simmer add the rice. Cook the rice for 15 minutes whilst constantly stirring. Before transferring the mixture to a baking dish. Sprinkle over a little extra nutmeg then place the baking dish into the oven to bake for 30 minutes.

Meanwhile, add the cubed apple to a saucepan with the sugar & cinnamon + a splash of water. Place the pan over a medium heat and let the apple cook away for 15 minutes. Stirring every now and then.

Serve the rice pudding topped with the apple compote or alternatively jam.
