Ribena (Blackcurrant Cordial)

Ingredients
3 cups Blackcurrants
1 cup/250ml Maple suyrup
3 cups/750ml Water
Method
Start by rinsing your blackcurrants thoroughly and removing any stems or leaves. Place the blackcurrants in a saucepan with the maple syrup and add just enough water to cover them. Bring the mixture to a gentle simmer and cook for about 10 to 15 minutes, stirring occasionally, until the berries burst and release their juices.
Once softened, pour the mixture through a fine sieve or cheesecloth into a bowl or jug, pressing the fruit with the back of a spoon to extract as much juice as possible. The pulp can be used like a jam.
Let it cool, then store it in the fridge. It should keep for a couple months.
To serve, dilute one part cordial with about four to five parts still or sparkling water, adjusting to taste.
