Fruit & Nut Rocky Road
Ingredients
4 Bars Green & Blacks 85% Dark Chocolate
For the toppings
160g (1 cup) chopped dried fruit
(pineapple, apricot, banana,cranberries, mango)
150g (1 cup) mixed nuts
40g (1/2 cup) coconut flakes
Method
Line a baking tray with greaseproof paper.
Gently melt the chocolate in a heat proof bowl over a small pan of simmering water. When the chocolate has melted pour it onto your tray & before it sets, sprinkle over the chopped fruit, nuts and coconut flakes.
Transfer the rocky road to the fridge to set for at least 3 hours. Break into shards before wrapping in paper and giving it to your loved ones. Don’t forget to tell them to keep it in the fridge.
