Meaty BBQ Mushrooms

Cola BBQ Sauce

1 cup Tomato Ketchup
3 tbsp  English Mustard
1/2 cup Brown Sugar
1 tbs Liquid Smoke
1 & 1/2 cups/360ml Good Quality Cola
1 tbs Ground Cumin
1 tsp Garlic Powder
1/2 tsp All spice
1 tsp Sea Salt
1 tsp Pepper
1 Bay Leaf
2 Star Anise


4-5 Oyster Mushroom Clusters
4 tbs Vegetable Oil
4 tbs BBQ Spice Blend, cajun spice would work.


2 Golden Beets, sliced fine
1/4 cup Pomegranate seeds
2 Handfuls Steamed Kale
Handful Tarragon


1/4 cup Red Wine Vinegar
1 tbs Maple
1/4 clove Garlic
1 tsp Toasted Fennel Seeds, crushed
1 tbs Toasted Poppy Seeds, crushed
1 Shallot, minced
