Burnt Courgette With Whipped Tofu

Ingredients

3 tbs olive oil 

Pinch sea salt 

4-5 courgettes 

2 tbs dried oregano 

Whipped tofu 

1 block silken tofu 

Juice & zest 1 lemon 

1 tsp garlic granules

3 tbs nutritional yeast 

1 tbs miso paste 

Pinch sea salt 

Serve with

6 tbs chives, chopped fine

Toasted Croissants 

Start by preparing the courgettes. Brush them with a little oil & season with salt. Place them over hot coals, allowing them to cook slowly. The key is to let them char gradually, turning them occasionally to ensure even cooking, please don’t be tempted to have the courgettes over a flame, it’ll just give them a non appetising powdery smokiness. The heat from the coals will infuse the courgettes with a deep smoky flavour. Take your time with this. 

While the courgettes are on the grill, prepare the whipped tofu. In a large mixing bowl, combine the silken tofu with the lemon juice and zest, garlic granules, nutritional yeast, miso paste & sea salt. Whisk these ingredients until smooth and creamy. 

Just before the courgettes are charred all over, hit them with a sprinkle of oregano for a little aromatic note.

To serve, slice the toasted croissants in half and generously spread a thick layer of whipped tofu mixture over & then a generous sprinkle of freshly chopped chive. 

Arrange the charred courgettes on top, then drizzle over some extra olive oil to serve.
